Here is a great recipe for some cookies that kids can bake. The dough should chill overnight, so you can get up tomorrow and bake before it gets hot outside.

Peanut Butter Cookies

Beat 2 eggs.

Then add:

2 sticks margarine

1 cup white sugar

1 cup brown sugar

1 cup peanut butter

1 tsp. vanilla

Mix well

Add:

2 cups flour

1 cup oatmeal

1 tsp. baking soda

1/2 tsp. salt

Mix dough well, cover and put in the refrigerator overnight to chill.

Next morning, preheat the oven to 350 degrees. Shape the dough into balls. Flatten with a fork dipped in white sugar and make a crisscross print on top of each cookie.

Bake for 10 minutes and take off the pan with a spatula to place on a cooling rack or platter. Serve with cold milk for a cool summer treat.
